Im Kontext von Spülprozessen der Schokoladenindustrie wurde das Mischverhalten hochkonzentrierter Suspensionen am Beispiel von Zucker-Öl-Suspensionen rheologisch und mittels Hele-Shaw-Zelle untersucht. Dabei zeigte vor allem das scherverdickende Verhalten der Suspensionen einen großen Einfluss auf das Mischverhalten.Symposium
