Abstract
This work examines the oxidation process of Sea buckthom oiI encapsulated in ionotropicalIy cross-linked alginate beads under oxidative conditions. The oxidation of oiI was monitoredby Fourier Transfonn Infrared Spectroscopy equipped with the universal ATR (FTIR-ATR) as an intemal accessory. We considered as markersof oxidation processes in sea buckthom oiI. the folIowing ratios between absorbances of some important bands: AZ853/A3OO5-3007. AZ853/A 1744. AZ853/A 115n 160.A 174J A3OO5-3007. A 1377/A3OO5-3007. AII5nl~A3OO5-3007T'he values of alI ratios indicated a fust stage oxidation of encapsulated oiI and a second or third stage oxidation of free oil. The encapsulated Sea bucktom oii showed a good stability under oxidation conditions. Differential scanning calorimetric analysis was used to characterize the thennal behavior of freeoiI.
